Bellini's Chowder at Home

Sick of trying to come up with new ideas for dinners and lunch during lockdown? We have had to cook most our meals at home now more than ever which we know can get quite boring! No need to worry, we have got you covered with our delicious chowder recipe so you can enjoy a taste of Bellini's Restaurant from the comfort of your own home! The perfect recipe for lunch, dinner or as a comfort food to warm you up in this current cold weather. The below recipe serves 2 so double or triple up ingredients depending on how many you are cooking for!

What you will need:
1 chopped onion
1 clove of garlic (optional)
1 chopped carrot
Half a small leek chopped
1 bay leaf
Rapeseed oil
Half a cup of white wine
2 cups fish stock
2 cups cream
2.5 cups milk
Cornflour (optional - depending how thick you want it)
Salt
White pepper
Nutmeg
Seafood mix (we used smoked haddock, cod, salmon and grilled salmon)
Parsley
Dill
Lemon Juice

Method:
  1. Add the onion, garlic, carrot, leek, bay leaf and rapeseed oil to a pan and sweat off until transparent
  2. Mix in the white wine, fish stock, cream and milk
  3. Mix in the cornflour at this stage if you are adding it
  4. Add the salt, white pepper and nutmeg to the mixture to taste
  5. Mix in your chosen seafood and cook for a few minutes
  6. Lastly add some parsley, dill and a squueze of lemon juice
  7. Serve and enjoy with some homemade brown bread
