All new contemporary vibe is complimented by award-winning food and service
DOUGLAS, CORK (October 25, 2013) - Bellini’s, The Maryborough Hotel & Spa’s signature restaurant, today unveiled an exciting new look and menu following the completion of a major renovation. The bar area was fully re-designed with an art deco flair, enlarged and raised to be level with the restaurant. The mouthwatering menu, fusing an eclectic mix of European and traditional flavours, is yet another reason Bellini’s is a can’t-miss destination for diners.
“We’ve been part of the Douglas community for over 16 years and enjoy the relaxed vibrancy of the people and town. We wanted to incorporate that same energy into The Maryborough through the Bellini’s relaunch, while at the same time creating a new modern, trendy dining destination,” said Justin McCarthy, General Manager of The Maryborough.
Inspired by his travels, Bellini’s new look was designed by owner Dan O’Sullivan, in partnership with interior designer Catherine Troy. New furniture, sourced by John Drummond in Italy, along with fixtures, black granite and gold accents give the restaurant a luxurious feel. A u-shaped, handcrafted bar is the focal point of the new area. With half-wall enclosures, both the restaurant and bar offer an intimate feel for conversation and dining all day, for all occasions.
Complementing the bold new ambiance, Head Chef Brendan Brosnan and Executive Chef Gerry Allen developed a provocative new menu using locally sourced ingredients. Available all day, the bar menu features delicious dishes including a fish platter with cured salmon gravlax and hay smoked hake, both done in house. An a la carte menu is offered from 6:00 PM until 10:00 PM with a variety of starters, mains, and desserts.
Bellini’s drink menu is equally enticing, with specialty wines sourced from small vineyards in the major wine regions of the world. Local craft beers from Franciscan Well Brewery in Cork City will be on tap. And cocktails such as the Maryborough Classic, which has Blue Curacao, Triple Sec, and Cinzano Bianco, will be available.
